Beef shank comes from the lower leg: a cross-section of muscle with connective tissue running all through it. Raw it is tough, but after three hours of slow simmering it turns soft and the collagen thickens the sauce. It is prepared to hand-slaughter standards and cut to order for you on the morning of delivery. This is the traditional cut for nihari, cooked slowly overnight with ginger, garlic and spice, thickened with a little flour and finished with fresh ginger, green chilli and lemon. It also makes Italian osso buco and a clear beef soup with vegetables. If your pieces include the bone, keep the marrow in the pot; it melts into the sauce.
