Halal T-bone steak, prepared to hand-slaughter standards. Sirloin and fillet in one cut.

A 400g T-bone steak, prepared to hand-slaughter standards and cut to order on the morning of delivery. The T-shaped bone separates two cuts: sirloin on the larger side, and a smaller piece of tenderloin on the other. You get two textures in one steak, and the bone adds flavour to the meat closest to it as it cooks. Grill it over charcoal and serve it with chips and a sharp tomato and onion salad, or cook it in a cast-iron pan and carve both sides off the bone to share at the table. Keep the seasoning simple, salt and black pepper, with perhaps a little garlic butter at the end. The tenderloin side cooks faster, so angle the steak so that side sits towards the cooler edge of the pan.
