Halal Tenderloin Steak

A 340g tenderloin steak, prepared to hand-slaughter standards and cut to order on the morning of delivery. Tenderloin is the long muscle beneath the spine that does very little work, so it is exceptionally tender, with a fine grain and little fat. The flavour is mild, which is why it is often served with a sauce or a well-seasoned crust. Cut it into thick medallions for a special dinner with a peppercorn or mushroom sauce, cube it for Turkish bonfile şiş, or slice it thinly for a quick beef stroganoff. Because there is so little fat it overcooks quickly, so a thermometer helps: around 52°C in the centre for rare and 57°C for medium-rare, before resting.
